Years ago it took a lot of man hours to get tomatoes to market.  Sorting them alone was incredibly cumbersome and not necessarily accurate or sanitary.  Today a market, restaurant, or any other shopper can get the exact tomato they want.  The reason is technology.  Modern processing plants using fast, accurate, sanitary tomato sorting equipment to do the job of hundreds of people in a fraction of the time.  Tomatoes can be sorted by color, grade, type, size, and more.  The same facility can process and ship the vegetables to virtually any destination and they will still be fresh on arrival.
